Please note that subscribe/unsubscribe and subscribe/monitor are two different things. Subscribe/unsubscribe refers to the subscription of a line against the TPO (or the PBX) while subscribe/monitor refers to having ringtone (and call log). So subscribing to a line in the way of subscribe/unsubscribe doesn't involve subscribing in the way of subscribe/monitor.

Subscribing (or Unsubscribing) all lines at once

To subscribe (or unsubscribe) to all lines of a group in one single step, perform a long press on the Subscribe (or Unsubscribe) button:

register

This will have the exact same effect as pressing the subscribe (or unsubscribe) button, selecting all lines and pressing the subscribe (or unsubscribe) button again like in the previous use-case.

Line configuration panel

A long press on a line or lines group's entry opens the Line configuration panel, just like in "classic" mode.

See On-the-fly setup of DDI lines.
